Bazaar-style buffet

02 May 2017 / 12:13 H.

BAZAAR scene, local flavour. The chefs have put their heads and hands together to offer dining guests 200 over local dishes to tease and satisfy tastebuds. This year, diners get to taste local delights which include Chef Yusoff’s grandmother’s recipe, a special Kelantanese Claypot Fish Head Curry the sous chef himself will prepare.
For a complete local dining “flavour”, the buka puasa buffet will be presented to diners in classic bazaar style. Stalls will line the sides of the hotel’s Big Apple Restaurant, serving local favourites like otak-otak, lamb biryani, pucuk manis ubi keledek and more.
According to Chef Yusoff, the bazaar theme stems from the scene at an actual bazaar. The chef explained the spectacle – the crowds, the wide variety of food, not forgetting the poor and hungry. He also informed that the amount of food served during the Ramadan buffet will be replenished to a certain extent. The reason behind this is to reflect the importance of not over-indulging during the month of fasting and spiritual preparation and to avoid food wastage.
