WHILE flipping through a recipe book, I came across a very simple recipe for vegetable and potato patties.
This recipe helps in your attempt to hide much-disliked vegetables in your children’s food.
It gave me an idea to modify this recipe to make it a little more savoury and add more texture to it with the addition of minced meat.
These meat and potato patties are quick and easy to make. They can be served as a snack or a dish for a main meal.
You can also create variations of these patties by substituting meat with fish like canned tuna or salmon, mushrooms, or add powdered spices to season the minced meat.
You could also add other vegetables such as mixed frozen vegetables, chopped broccoli or cauliflower, or chopped red chillies.
Meat & potato patties
Ingredients (makes 15-20 patties)
»2 large potatoes
»2 carrots
»150g minced meat (chicken, pork or beef)
»A few stalks of parsley or coriander, chopped
»Salt and pepper
»3 tbsp cooking oil
»½ cup dry breadcrumbs (or rice flour)
Method
1. Peel the potatoes and carrots, and cut them into pieces.
2. Steam the potatoes and carrots until soft.
3. Season the minced meat with salt and pepper.
4. Heat a pan with a little oil, and when oil is heated, stir fry the minced meat until cooked.
5. Mash the potatoes and carrots together.
6. Mix the minced meat, mashed potatoes and carrots, and chopped parsley or coriander in a bowl. Stir to combine evenly.
7. Place breadcrumbs on a plate.
8. Take 2tbsp of mash mixture and form into a patty. Coat the patty with breadcrumbs.
9. Repeat with the remaining mixture.
10. Heat oil in a frying pan. Fry the patties over medium heat, until they are brown on both sides.
11. Drain on a paper towel and serve.
