A flavourful taste of success

BERJAYA Hotels & Resorts recently launched its first cookbook, Flavours of Berjaya: A Taste of Success, at Borders, The Gardens Mall, in Kuala Lumpur.
The 152-page full-colour cookbook features a compilation of over 30 signature dishes by 17 chefs from 14 Berjaya Hotels & Resorts properties around Malaysia and abroad.
It was launched by Berjaya Hotels & Resorts chief executive officer Hanley Chew, and Berjaya Corporation Bhd Retail & Innovation director Yau Su Peng.
Among the recipes found in the book are Sri Lankan lagoon crab curry, shake teriyaki, steamed seafood chilli mousse in coconut, tian of avocado, red snapper Creole style, mutton bone rasam soup and daging masak hitam.
Other than sharing their secret recipes, the featured chefs also share cooking tips they have acquired over the years.
Chew said: “Growing up in a multicultural community in Malaysia has taught me that we can always set aside our differences and embrace food as a common language.
“[Food] has always been a way to socialise and I love how it transcends race and ethnicity, connecting people from one culture to another.”
He added that he has personally tasted the dishes as they were being prepared at a special group function held in January.

When asked to pick his favourite, he said he loved them all, adding that it took them close to six months to get the chefs, the right recipes and also the photography done.
“Each chef was asked to submit a few recipes, and to avoid repetition, a committee vetted through them all.”
Among some of the chefs whose recipes are featured are Berjaya Hotel Colombo executive chef Mohan Perera, Berjaya Times Square Hotel Kuala Lumpur chef de cuisine Valmurugan Subramanian, Berjaya Langkawi Resort chef de cuisine Hasadee Poonprakhon, Berjaya Penang Hotel Chinese cuisine chef Chen Chek Kuong, Berjaya Waterfront Hotel sous chef Azni Shahrizan Ab Ghani, and Berjaya Praslin Resort pastry chef Denis Prempeh Marimba.
Flavours of Berjaya: A Taste of Success (RM45) is now available at all Borders and major bookstores nationwide, as well as at the 14 Berjaya Hotels & Resorts properties in Malaysia and abroad.
